DOMAINE PHILIPPE BORNARD - Les Chassagnes - Savagnin Ouillé 2016
Domaine Philippe Bornard is one of the most renowned in the Jura. Originally from the village of Pupillin, Philippe Bornard had always worked in the vineyard but was selling his grapes to the cooperative wine cellar of his village before taking the plunge in 2005, producing his own wines. Today, Tony Bornard (his son) manages the Domaine which extends over 11 hectares in Arbois-Pupillin, and in the Côtes du Jura. The vineyard is planted in Chardonnay, Savagnin and Melon for the white grape varieties and in Ploussard, Trousseau and Pinot Noir for the red grape varieties. The vines are cultivated with respect for the environment, in organic certification with very little human intervention.
This 2016 Chassagnes cuvée is a Savagnin Ouillé. Ouillage (“Topping-up”) is a periodic action aimed at always maintaining the maximum level of barrels and tanks in order to compensate for losses due to absorption or evaporation. Thus, the wine is vinified in a non-oxidative manner and reflects the characteristic minerality of the terroir.
