Mas del Perie - Les Escures 2019
Fabien Jouves comes from an old farmer family in the Causse region. He became a winemaker in 2006 by creating the Mas del Périé on the highest hills of Cahors. Here, Malbec (also called Cot) is the grape variety of choice. Because of the situation of the domain at the junction of the terroirs of the Quercy hills and those of Cahors, the plot selection was obvious for Fabien to express the different facets of Malbec. This expression of the terroir is reinforced by biodynamic agriculture certified since 2011, respectful of life, plants, people and their environment.
The winemaking of the grapes in the cellar is done naturally, without oenological inputs, and the accompaniment of the wine until its maturity, in concrete vats, barrels and casks according to its personality.
Les Escures is a terroir wine made from Malbec (Cot) with an average age of 25 years. The terroir is made up of Kimmeridgian limestone on the tops of hills at an altitude of 350 meters. The culture is in organic farming, with manual harvests, natural vinification and destemming of the grapes. Fermentation lasts 30 days and is followed by alcoholic fermentation in concrete tanks. Aging lasts 6 months, also in concrete tanks.
