Domaine de la taille aux loups - Jacky Blot - Triple Zéro Rosé
Domaine de La Taille aux Loups is located in Montlouis-sur-Loire, in the Loire Valley. It exists since 1988, then under the management of a Bordelais who rented 7 hectares of vines belonging to André Chapeau and Clément Germain. In 1990, the wine broker Jacky Blot took care of the vinification of the vintage and over the years became attached to the Domaine. Thus, in 1992, he became the owner. In collaboration with Christophe Mesliand, they quickly forged a good reputation. Jacky Blot attaches importance to respecting nature and the grapes: no pesticides, herbicides or chemical fertilizers. The estate has been certified in organic farming since 2012. The choice of traditional ploughing and manual harvesting is emphasised, as soon as the grapes reach perfect maturity. He avoids operations in the cellar and prefers traditional aging, without rushing through the stages. Jacky Blot also owns the Domaine de la Butte in Bourgueil.
The name comes from the three "zeros" of Jacky Blot:
Zero chaptalization (addition of sugar).
Zero Liqueur de Tirage; the very slow fermentation prevents the yeasts from consuming all of the sugar naturally contained in the grapes. The bottling is done when there are 12 grams of sugar left to ferment.
Zero Liqueur d’Expédition; at the time of disgorging, the level is carried out with identical wine instead of the usually added sugar. The maturity of the grape allows disgorging without shipping liquor in order to preserve all the purity of the wine.
