Domaine Aux Moines, located in Roche-aux-Moines in the heart of the Savennières appellation, overlooks the Loire River from a steep hillside with schist and sandstone soils. Founded in the 9th century by Cistercian monks, this iconic estate is now passionately managed by Monique and Tessa Laroche, who perpetuate a demanding organic viticulture that respects all living things. The manual work in the vineyards, controlled yields, and natural winemaking reflect the estate's commitment to revealing the purest expression of Loire Chenin Blanc.
The 2023 Savennières Roche aux Moines is the estate's flagship wine, made from old vines deeply rooted in these unique schistous terroirs. The grapes, harvested at perfect ripeness, are gently pressed before a slow fermentation with indigenous yeasts, followed by extended aging on fine lees. The 2023 vintage, marked by balanced ripeness and ideal weather conditions, has produced a wine that is at once powerful, taut, and remarkably precise.
On the nose, it opens with aromas of quince, roasted apple, and ripe pear, enhanced by hints of white flowers, beeswax, and warm stone. On the palate, the wine is ample and precise, supported by vibrant acidity and a remarkably pure, saline texture. Flavors of yellow fruit, candied citrus, and subtly spiced honey linger in a long, focused, and profoundly mineral finish, a hallmark of the Roche-aux-Moines terroir.
