Le Clos Rouge - Babel 2018
Le Clos Rouge is located in the town of Saint-Jean-de-la-Blaquière, in the Terrasses du Larzac appellation in Languedoc. From 2 hectares in 2013, the domain extends since 2020 on 13 hectares by the addition of new plots of Cinsault, Carignan, Grenache Blanc and Noir, and Syrah. The work in the vineyard is done without phytosanitary inputs from industry, with mechanical and manual weeding. The use of liquid manure and decoctions (nettle, horsetail, fern and comfrey) being systematically associated with sulfur and copper sprays. Certification for organic farming has been in place since the 2018 vintage.
Babel is a blend of Syrah, Grenache and Cinsault. The bunches are destemmed then vatted by gravity. Fermentation occurs spontaneously with indigenous yeasts. The aging lasts 18 months in barrels.
