Domaine de la Borde - Les écrins - Savagnin 2014
Domaine de La Borde is located in the towns of Pupillin and Arbois in the Jura. The 5-hectare estate is managed by Julien Mareschal with respect for the terroir. The vineyard has been certified in organic farming since 2012, and biodynamic preparations are applied to all the vines. The local grape varieties are cultivated on plots whose soils and exposure reflect the typicality of each.
Les Écrins comes from Savagnin vines cultivated on a terroir of deep gray and blue marls, facing south-west with a steep slope and at an altitude of 350 to 450 meters. The harvest is manual then destemmed. Static cold settling is carried out for 12 to 24 hours. Alcoholic fermentation takes place in stainless steel vats. Aging lasts 12 months on lees during malolactic fermentation, then aging with oxidative aging, without topping up for 24 to 36 months.
