LUCIEN AVIET - Cuvée des Geologues - Trousseau Marne Rouge 2020
The Caveau de Bacchus is based in Montigny , in the Jura . It was created in 1961 by Lucien Aviet , who was joined by his son Vincent in 1999. Lucien Aviet is still very involved, but now the reins are gradually being taken over by his son. Consisting of a small 6 hectares, the vineyard has a traditionalist tendency. The production is entirely harvested by hand and destemmed. Spontaneous fermentations take place in large, old, very well maintained Alsace tuns. The bottles have always been sealed with wax and are now part of the hallmark of the wines.
Trousseau Marne Rouge is a plot-based cuvée from a place called Poussot. The name refers to the source rock that constitutes the terroir of the plot: the iridescent marls of Keuper. The harvest is destemmed and then macerated for 3 weeks. The wine is aged in oak barrels for 12 months.
