The vines, about 25 years old, are located at nearly 350 meters altitude, on a mosaic of red and gray marls that bring depth, freshness, and mineral tension to the wine. The grapes are hand-harvested at the beginning of October, then carefully sorted to preserve the purity of the fruit. The harvest is fully destemmed before fermentation in stainless steel tanks with a pied de cuve, following a precise and low-intervention vinification logic. The long maceration stabilizes the color and gives more structure while preserving the natural finesse of Trousseau. The 12-month aging in tank preserves aromatic brightness without wood influence and allows the direct personality of the Arbois terroir to express itself.
