LUCIEN AVIET - Trousseau - Cuvée des Geologues 2020
The Caveau de Bacchus is based in Montigny , in the Jura . It was created in 1961 by Lucien Aviet , who was joined by his son Vincent in 1999. Lucien Aviet is still very involved, but now the reins are gradually being taken over by his son. Consisting of a small 6 hectares, the vineyard has a traditionalist tendency. The production is entirely harvested by hand and destemmed. Spontaneous fermentations take place in large, old, very well-maintained Alsace tuns. The bottles have always been sealed with wax and are now part of the hallmark of the wines.
This cuvée is a blend of the press juices of Trousseau 's other 2020 plot cuvées (Ruzard, Rosières, Poussot and Nonceau). The grapes are destemmed and vinified separately with indigenous yeasts. The maceration lasts 3 weeks then the must is pressed: the free-run juices are reserved for the production of plot vintages and the press juices obtained after 2 or 3 presses are blended and then transferred to tuns where aging lasts 1 year.
