Inspired by Dùn Cana, the island's iconic volcanic mountain, this single malt highlights the wild, maritime, and mineral character of its native terroir. This release is part of the distillery's annual editions range, with a profile that slightly evolves according to vintages while maintaining a common identity: a meeting between the liveliness of American rye casks, the richness of sherry, and a delicate smoke. Bottled at 52%, without chill filtration or added coloring, this whisky retains a beautiful aromatic intensity and a full texture, true to Raasay's artisanal approach.
The maturation relies on a particularly expressive construction. The whisky begins its aging in American rye whiskey casks, bringing spicy, cereal, and slightly peppery notes. It then benefits from a second maturation in Pedro Ximénez and Oloroso sherry quarter casks, small casks that intensify the contact with the wood and enhance aromatic concentration. The Pedro Ximénez adds a more generous dimension, around dried fruits, grape, and pastry sweetness, while the Oloroso develops more structured, spicy, and slightly oxidative nuances. The blend of peated and unpeated distillates gives the whole a subtle smoke, never overpowering, which accompanies the sherry notes without dominating them.
On tasting, Dùn Cana Sherry Quarter Cask reveals a rich, spicy, and indulgent profile. The nose opens with raisins, peppery spices, vanilla, candied fruits, and a touch of woody smoke. On the palate, the attack is ample and warm, carried by dried fruits, slightly salty chocolate, soft spices, brown caramel, and a fine note of toasted wood.
