Cider is made with specific apples or pears (some of them being very old varieties), and there are four types of apples used in cider making: sweet, bittersweet, bitter and sour. The quality of the cider depends upon the type of soil, the type of orchard and the pressing of the fruit.

You have to imagine the smell as a child, coming home from school just as granny is taking a fruit cake out of the oven, this calvados is full of sultana and baked apple aromas and a rich baked apple taste. It is made from fallen apples that have a higher sugar content.
