Whether young or old, we prefer to decant the wines. It is a sign of respect for the oldest wines, a sign of confidence in the younger ones.

Decanting an aged wine just a few moments before serving it helps to ensure that its clarity and shine will not be obscured by the natural deposit that has taken place over the years.
