Champagne Ulysse Collin - Les Maillons - Blanc de Noirs 2015
Ulysse Collin is a small Champagne House located in Congy, south of Epernay and west of Vertus. The Collin family has worked in the vineyard since 1812, but production known as such started in 2003 when Olivier Collin retrieved 4.5 hectares of vines that the family rented to a negociant. The vineyard is planted only in Chardonnay and Pinot Noir. Each cuvée produced is specific to a plot. The first and second pressing of each plot are vinified and aged separately for at least a year before blending. Influenced by his apprenticeship at Anselme Selosse, the base wines are fermented and aged in oak barrels. The vines are cultivated in sustainable agriculture.
Les Maillons Blanc de Noirs is an Extra Brut Champagne made from Pinot Noir from the Coteaux Sézannais of Maillons. The vines were planted in 1971 on a soil of red clay and soft chalk. The juice is vinified then the wine matured for 12 months in barrels, with a second fermentation in the bottle for 3 years.
