Domaine Vacheron - Sancerre Blanc 2025
In Sancerre, Domaine Vacheron is one of the most respected references in the Loire, with an approach that has deeply marked the appellation through its precision and consistency. This family estate, now run by Jean-Laurent and Jean-Dominique Vacheron, has established itself through a demanding reading of the terroirs and a pursuit of purity that avoids any showy effects. The estate works with organic and biodynamic farming, paying particular attention to soil life, grape maturity, and the natural expression of the place. Its Sancerre Blanc is a very faithful entry point into the house's universe, less parcel-specific than the great terroir cuvées, but already marked by great clarity of expression. The Sauvignon Blanc takes on a slender, precise, mineral form, far from overly varietal or exuberant aromatic profiles. The 2025 vintage seems to express freshness, brightness, and directness, with a balance that favors tension, salinity, and fruit finesse. It is a classic Sancerre blanc, both accessible in its youth and sufficiently structured to evolve for a few years in the cellar.
This cuvée is made from Sauvignon Blanc, the emblematic grape variety of Sancerre, grown on the different major soil types of the appellation. The estate's vineyard extends over limestone, clay-limestone, and flint terroirs, whose blend gives the wine its balance between freshness, mineral relief, and aromatic precision. The biodynamic management preserves a lively expression of the grape, without seeking excessive ripeness or an overly pronounced aromatic signature. The harvest is carefully conducted to preserve the fruit's finesse and the natural energy of the Sauvignon. The vinification respects the identity of the vintage, seeking purity, tension, and elegance rather than power. The aging supports the wine without dominating it, bringing cohesion, a more composed texture, and better integration of acidity. In 2025, this Sancerre Blanc shows itself upright, precise, and very saline, with a freshness sensation that naturally extends the finish.
The color shows a bright pale yellow, with slight green reflections that highlight the wine's youth. The nose opens with lemon, grapefruit, green apple, fresh pear, and white flowers, then evolves towards more mineral notes of rubbed stone, wet chalk, and discreet flint. On the palate, the attack is lively, clear, and perfectly defined, with a fine but well-present body. The fruit remains precise, carried by citrus, white fruits, and a floral touch that adds elegance. The finish extends on fine salinity, delicate bitterness, and a very characteristic mineral sensation of fine Sancerre. This wine will ideally accompany oysters, a seafood platter, langoustines, sea bass ceviche, white asparagus, fresh goat cheese, or a slightly aged Crottin de Chavignol. Served around 10 to 12°C, it will offer much pleasure in its youth while being able to gain complexity after a few years of aging.
