Canon Castle 2020
Château Canon is a 34-hectare estate located in Saint-Émilion , Bordeaux . It is classified Premier Grand Cru Classé B in the latest Saint-Émilion wine classifications. In 1760, the frigate lieutenant and privateer with the eponymous name - Jacques Kanon, originally from Blayais - acquired the Domaine de Saint-Martin thanks to the profits of the races he carried out on behalf of Louis XV at the expense of English ships. . He immediately undertook the construction of an elegant residence in the vicinity of which he developed the monoculture of the vine on all these plots, a very rare strategy at that time. Later in 1919, the Fournier family took over the reins of the château before handing it over to Chanel in 1996 . Château Canon occupies a limestone terrace facing south-west, at an altitude of 87 meters where Merlot and Cabernet Franc are grown.
The Grand Vin du Château Canon is a blend of Cabernet Sauvignon (75%) and Merlot (25%) . The alcoholic fermentation lasts 10 days, followed by a 15-day maceration with three daily pumping-overs. The malolactic fermentation is carried out in stainless steel tanks and barrels. The aging lasts 18 months in barrels , 50% of which are new . For Bordeaux, the 2020 vintage promises to be excellent, despite one of the most trying years in recent history. The Covid-19 pandemic posed various challenges during the growing season, harvest and en prime campaign, as new sanitary protocols had to be observed. Although the growing season saw some rain, it was the dry spells that took over, concentrating the grapes and creating a harvest with the potential to produce rich, intense wines . Overall yields were slightly below average, but fruit was generally healthy and of high quality .
