Saint Nicholas Abbey rum is produced in Barbados , West Indies. Located in the hills of Saint-Pierre, the Abbey of Saint-Nicolas encompasses more than 160 hectares of sugar cane fields, lush tropical ravines, mahogany forests and formal gardens. Due to the decline of the sugar industry, the fields are currently preserved and maintained for future use. Currently, approximately 24 hectares are planted and harvested each year for use by the syrup factory, and specialized sugarcane varieties are growing in a nursery, ready for future use as the syrup factory needs. and distillery are increasing.
The still, named “Annabelle”, was specially designed and manufactured for Saint-Nicolas Abbey to produce light (highly distilled) rum for aging. Saint Nicholas Abbey Rum is the only product in Barbados made from cane syrup, rather than molasses, following the traditional molasses distillation process. The syrup is stored to ensure year-round production since Barbados' harvest season only runs from January to June.
This limited edition comes from a single cask aged 12 years in Barbados.
