Domaine Bernard Defaix - Chablis Grand Cru - Vaudesir 2021

Domaine Bernard Defaix is located in Chablis , in Burgundy. It was founded in 1959 by Bernard Defaix and is now managed by his sons Sylvain and Didier Defaix . The estate has 27 hectares of vineyards, in the Chablis Premier Cru (Côte de Lechet, Vaillons and Lys), Chablis and Petit Chablis appellations. The vines are cultivated in certified organic agriculture .

The Chablis Grand Cru Vaudésir comes from vines with an average age of 35 years, located between Valmur and Preuses on a steeper terrain, less calcareous and a little lighter than the other Grands Crus. Fermentation and aging are carried out in oak barrels with regular stirring. The aging lasts 18 months .
