After the harvest, the grapes are sorted and selected in the cellar, before being delicately pressed. The juice flows by gravity into the cellar. Fermentation takes place with indigenous yeasts. The wines are aged in the vaulted cellar built in 1829, in 80 wooden barrels. The oldest of these barrels dates from 1890 and each barrel contains the harvest from a single plot of the vineyard.
100 Hügel (100 hills) comes from the fertile hills of Rheihessen. The harvest is done manually and is entirely de-stemmed. The grapes undergo a short pellicular maceration before fermentation in stainless steel vats .
