Bordeaux Distilling - Adventure No. 2 - French Rye Whisky - 3 years - American oak barrels - Organic - 47%
The second chapter in the Bordeaux distillery's experimental series (and a team favorite), Adventure No. 2 explores rye from a more assertive and sunny angle. Conceived by the team of four partners, including actor Jean Dujardin, this French rye boasts a perfectly controlled youthful energy, targeted aging in American oak, and a commitment to organic production from the grain through to bottling. The idea isn't to copy American standards, but to respond to them with a Bordeaux sensibility: clean grain, precise texture, aromatic intensity, and a fresh finish.
The heart of the recipe is based on certified organic rye, fermented at a measured rate to enrich the grape variety's natural spice spectrum. Distillation, conducted in small batches on a pot still, preserves the grain's character while gaining finesse. The three-year aging takes place in American oak barrels, selected for their contribution of vanilla, blond caramel, and toasted coconut, but also for their ability to smooth out the edges without smothering the cereal structure. The 47% bottling affirms the style: more depth, more spices, a savory mouthfeel that holds its own both in pure tasting and in mixology.
On the nose, the rye expresses itself through baking spices, caraway, and sweet pepper, joined by the imprint of American oak—natural vanilla, toffee, coconut shavings, and orange zest. On the palate, the attack is frank and vibrant, carried by toasted cereal, light maple syrup, a hint of cocoa and cinnamon; the alcohol, perfectly integrated, supports the breadth without weighing it down. The finish is long, dry, and clean, unfurling a very fine spicy and woody thread, with a saline aftertaste that invites a second glass.
Adventure No. 2 is best enjoyed neat at around 16 to 18°C, with a drop of water to emphasize the spicy register. Its 47% structure makes it a perfect ally at the bar: a crisp Manhattan with precise contours, a characterful Old Fashioned, a subtly vanilla Boulevardier, a refreshing highball that highlights the freshness of the ocean. At the table, it pairs naturally with grilled duck breast, a veal chop with herbs, a mature Comté cheese, a lightly salted blue cheese, or a walnut and caramel dessert.
This vintage marks the positioning of the Aventure series: organic French rye whiskies, crafted in small batches in Bordeaux, which assume a clear identity. Where Aventure No. 1 sought the caressing elegance of French oak, Aventure No. 2 asserts the aromatic frankness of American oak and a more vertical intensity, without ever sacrificing balance.
