Domaine Sylvain PATAILLE - Bourgogne Aligoté - Magnum 2023
Located in Marsannay-la-Côte, on the northern edge of the Côte de Nuits, Domaine Sylvain Pataille has established itself as a leading figure in contemporary Burgundy. A trained oenologist and a craftsman of the living world, Sylvain Pataille cultivates his vines biodynamically, with an approach of exemplary precision and sincerity. His wines, imbued with energy and purity, are the truest expression of the Marsannay terroirs and their chalky nuances.
The 2023 Bourgogne Aligoté in magnum format perfectly illustrates the estate's philosophy: a clear expression of the grape variety and the terroir. Made from old Aligoté vines rooted in clay-limestone soils, it is vinified naturally with indigenous yeasts, then aged on its fine lees in tanks and old barrels. This 2023 vintage, marked by a beautiful balance between ripeness and freshness, delivers a wine of crystalline tension and remarkable depth for the appellation. The magnum format, ideal for aging, promotes a slow and harmonious evolution, allowing the wine to gain complexity over time.
On the nose, the 2023 Bourgogne Aligoté seduces with its vibrant aromas of fresh citrus, green apple, and crisp pear, underscored by a delicate floral note and a hint of wet stone. On the palate, the attack is lively and precise, driven by a beautiful chalky minerality. The texture, both taut and silky, unfolds flavors of ripe citrus, candied lemon, and white fruits, extending into a mouthwatering and lingering finish.
This wine is ideally enjoyed as an aperitif or with seafood, sea bass ceviche, scallop carpaccio, or fresh goat cheese. In magnum, it reveals its full aging potential and its ability to evolve elegantly with notes of honey and hazelnut.
