Cantillon Brewery - Gueuze - 5.5% 2025
The Cantillon Brewery is a true Brussels institution, considered one of the last great guardians of traditional lambic. Founded in 1900 in Anderlecht, it perpetuates a unique know-how around spontaneously fermented beers, in a place that has become both an active brewery and the Brussels Gueuze Museum. Its universe is based on long aging, wild yeasts, oak barrels, and the patient blending of lambics of different ages. In a brewing world often marked by rapid innovation, Cantillon maintains an almost heritage dimension, deeply artisanal and rare. Each batch has its own identity, as the brewery does not seek to produce a standardized taste but to accompany the living expression of its lambics. This Gueuze 2025, bottled in 2025, fully fits into this demanding tradition. It is a mythical beer, sought after by enthusiasts worldwide, capable of evolving beautifully in the cellar over many years.
The Cantillon Gueuze 2025 is made from a blend of lambics from several years, selected for their balance, acidity, structure, and potential for bottle refermentation. The role of the blender is essential, as each barrel has its own character, depending on the lambic's age, evolution, aromatic intensity, and complexity. The lambics are kept in oak barrels, where they gradually develop woody, wild, tangy, and deeply Brussels notes. After blending, the beer naturally referments in the bottle, giving rise to a fine and lively effervescence. The 5.5% strength maintains great drinkability while fully expressing the tension, depth, and complexity of the style. The 100% Organic Lambic label also highlights Cantillon's commitment to a respectful approach to raw materials. This 2025 bottling is therefore much more than a fresh beer to be consumed quickly: it is a bottle for aging, whose profile will continue to evolve over time.
In the glass, Cantillon Brewery Gueuze 2025 reveals a golden robe, slightly cloudy, animated by a fine and natural bubble. The nose opens on lemon, green apple, citrus fruits, dry hay, old wood, and a delicate farmyard touch, typical of great traditional lambics. The mouth is lively, dry, and intensely refreshing, carried by a clear but elegant acidity. The body remains light in alcohol but deep in aromas, with a beautiful tension between fruit, wood, wild yeasts, and a saline finish. The style is upright, complex, and extremely digestible, with a dry length that calls for both the table and contemplative tasting. This Gueuze will perfectly accompany oysters, seafood, roasted poultry, aged goat cheese, Comté, fermented dishes, or slightly tangy cuisine. Serve around 8 to 10°C, in a tulip glass, taking care not to serve the sediment if a clearer expression is desired.
