DOMAINE DE TREVALLON - Bio 2016 - Magnum

Trévallon is characterized by long aging. More than 2 years for the reds.
Racking is limited to the strict minimum, the lees found at the bottom of the barrels continue to nourish the wine throughout the aging process.

A wine of great aromatic complexity: Star anise, liquorice, wild blackberry, blackcurrant, cedar ... Beautiful ripe tannins and great freshness.
Aging potential: certainly over 35 years.

The vintage :
Unfortunately the wild boars have been there ... We have never had so much damage: 30% of the harvest. Loving more Syrah, the wild boars ate less Cabernet. The 2016, “natural” levy requires, will be made up of 60% Cabernet.

Situation :
North of the Alpilles

Terroir :
Limestone and clay soil, very stony: Hauterivien and Barrémien, secondary era, lower Cretaceous, less than 130 million years old

In the vineyard :
Beginning of the harvest: September 12
End of the harvest: September 22

Vinification :
Vinification without destemming, without yeasting and without sulfur.
Aging 24 months in tuns. Finishing with fresh egg white, no filtration for bottling.

Grape varieties :
Cabernet Sauvignon: 60%
Syrah: 40%
