Terraces and steep slopes (Haut Fitou)
Vinification
Direct pressing in a pneumatic press. After static cold settling, alcoholic fermentation at low temperature exclusively from indigenous yeasts. The malolactic fermentation is done.

60% Mourvèdre
30% Grenache gris. Supple, soft, finesse, smoothness and velvety
10% Syrah. Spirit and elegance, persistence in the mouth
Work in the vineyard
Short goblet pruning for Morvèdre and Grenache gris, simple Guyit for Syrah, crushed vine shoots (addition of humus)
