Maison Ventenac - Eve 2024
North of Carcassonne, Maison Ventenac produces precise and easy-to-drink wines from the cool slopes of Cabardès. The range of signature vintages showcases straightforward expressions, focused on drinkability and energy.
Eve 2024 is a red from the IGP Pays d'Oc that boasts a decidedly light character. A balanced vintage, harvested at just the right moment of ripeness, and infused to enhance the juice and delicate tannins. Short macerations, controlled temperatures, and aging primarily in concrete vats to preserve the crispness of the fruit and its tension. Early bottling to capture the vintage's momentum. The nose opens with raspberry and morello cherry, joined by violet, a hint of pepper, and a touch of fresh stone. The palate is supple and slender, carried by juicy red fruit and a tangy structure that flows straight. The tannins are fine and smooth, the heart of the palate retains nerve without harshness. The finish is clean and sapid, with a hint of blood orange, a hint of liquorice, and a mineral breath that prolongs the freshness.
At the table, serve slightly chilled with herb-roasted poultry, filet mignon, a plate of fine charcuterie, bistro cuisine, grilled vegetables, or an anchovy pizza. It can also be served with mildly spiced grilled fish. Ideal temperature: 14 to 16°C in a tulip glass. Open 20 to 30 minutes before serving to loosen the bouquet. Drink immediately, three to five years depending on the winery.
