Domaine Chantal Lescure - Le Clos des Topes Bizot 2021
Domaine Chantal Lescure is located in the town of Nuits-Saint-Georges , in Burgundy . Founded in 1975 by Chantal Lescure and Xavier Machard de Gramont , the family estate now operates 19 hectares of vines, to the north on the hillsides of Dijon and to the south as far as Meursault. Aymeric and Thibault Machard de Gramont , the two sons of Chantal Lescure, took over the estate when their mother died in 1996. Each year, they produce 19 cuvées from 35 plots. The vineyard is entirely cultivated in certified organic farming since 2006.
Le Clos des Topes Bizot comes from Pinot Noir vines, planted in 1960 on an area of 3 hectares on the Beaune mountain. The soil is clay-limestone, very stony. After the manual harvest, the grapes are sorted, destemmed and not crushed. Fermentation is gentle and long in stainless steel vats, with moderate punching down. Fermentation lasts 18 to 25 days. The wine is aged in vats and barrels of 228 and 500 liters , from two to three wines.
