The Aven of the Nymphs - Richard Lavanoux - Pic Saint Loup 2021
L'Aven des Nymphes is located in the medieval village of Matelles, in the Pic-Saint-Loup appellation in Languedoc . The 4-hectare family estate has been operated by winemaker Richard Lavanoux since 2017, and the first vintage was released in 2019. The vines are cultivated on a clay-limestone terroir formed from sedimentary rocks, rich in stones and clay. Since 2018, the vineyard has been converting to organic farming .
This wine is a blend of Syrah (90%) and Grenache (10%) harvested in two stages to obtain different maturities. Part of the harvest is vinified in whole clusters. Aging lasts 12 months in vats (85%) and in French oak demi-muids (15%).
