La Spinetta - Bricco Quaglia - Moscato d'Asti 2022
La Spinetta is located in Piedmont , Italy . The estate was established in 1977 by the Rivetti family , with production initially focused on Moscato d'Asti . The vines of La Spinetta are at least 35 years old and no chemical fertilizers or pesticides are used: 75% of the vineyards are cultivated biodynamically .
Moscato d'Asti Bricco Quaglia is made entirely from Moscato Bianco , grown on the Biricco Quaglia terroir, at 300 meters above sea level, composed of limestone and sandy soils. The Muscat grape juice is transferred to a pressurization tank . Yeast is then added, but the tank is not necessarily sealed because carbon dioxide is only trapped when fermentation is almost complete to reach the appropriate level of carbonation. When the desired alcohol level is reached ( 4.5% to 5.5% ), fermentation is interrupted by cooling the wine. The second fermentation takes place in a pressure tank with selected yeasts. The temperature is increased (20˚C). Fermentation is stopped when foam begins to form and the alcohol reaches between 7% and 9.5% with average residual sugar levels of around 100 g/L .
