Domaine Laurent Tribut Dauvissat - Chablis 2023
Domaine Laurent Tribut is located in Poinchy in the Chablis appellation, in Burgundy . It was created in 1987 by Laurent Tribut , the husband of Marie-Clothilde Dauvissat , a very prominent winemaking family. Laurent began by making his wines in the Dauvissat family cellars for 10 years before developing his own cellar. Years earlier, the Dauvissats had purchased excellent vineyards in Chablis, adjoining their own Premiers Crus to give their children the opportunity to become winemakers, and so Marie-Clothilde and Laurent Tribut took over these vineyards. Today, he cultivates 8 hectares of vines, mainly in Chablis Villages but also owns a few Premier Cru plots in Beauroy, Montmains and Côte de Léchet . His children, Solange, Adeline and Gabriel have joined the family business as talented winemakers in their own right. They follow the traditional Dauvissat harvesting and fermentation methods. The vineyard is managed using sustainable agriculture .
Chablis is made from Chardonnay from 5 different plots on 4 hectares, with an average age of 30 years. The whole bunches are directly and gently pressed. Fermentation takes place with indigenous yeasts in stainless steel vats. Aging lasts 6 months in stainless steel vats , then 12 months in barrels with several passages .
