Domaine Gueguen - Chablis 2025
The Domaine Céline and Frédéric Gueguen is located in Chablis, in the department of Yonne, in the heart of the Chablis vineyard, one of the northernmost areas of Burgundy wine country. The estate was created in 2013 by Céline Gueguen and her husband Frédéric, both from families deeply linked to local viticulture. Together, they have gradually developed a vineyard of about thirty hectares spread over several appellations in the area, mainly planted with Chardonnay, the emblematic grape variety of Chablis. The vineyard extends around communes such as Chablis, Préhy, or Chichée, where Kimmeridgian soils rich in limestone and marine fossils shape the mineral style of the wines. This terroir, combined with the cool climate of northern Burgundy, favors wines that are both taut, precise, and very expressive on freshness. The estate favors viticulture attentive to respecting the soils and the environment to preserve the identity of each plot. In this context, the Chablis 2025 fits into the tradition of the estate by offering a clear and bright interpretation of Chardonnay from these limestone terroirs.
The Chablis 2025 is made exclusively from Chardonnay coming from plots located on slopes mostly exposed southeast around Chichée and Préhy. The vines root in Kimmeridgian clay-limestone soils that give the wine its characteristic mineral signature. The grapes are harvested at maturity to preserve the balance between fruit and freshness, essential in this northern region. After gentle pressing, fermentation takes place at low temperature in temperature-controlled stainless steel tanks to preserve the aromatic purity of the grape variety. The aging continues on fine lees for several months, allowing to bring texture while preserving the natural tension of the wine. A malolactic fermentation is generally carried out during this period to harmonize the balance of the wine before bottling. This technical approach aims to produce a precise and readable Chablis in its origin, favoring freshness and finesse rather than power.
On tasting, the Chablis 2025 reveals a fine nose dominated by aromas of citrus, lemon, and white-fleshed fruits, accompanied by delicate floral notes. The palate is distinguished by a fluid and energetic texture, carried by a lively acidity that highlights the natural freshness of Chardonnay grown on these limestone soils. The flavors evoke white peach, pear, and lemon zest, supported by a mineral framework reminiscent of stone and chalk. The balance rests on tension and aromatic purity, characteristics of the Chablis style. The finish, clear and slightly saline, extends the fruity aromas with a persistent freshness sensation. This wine pairs particularly well with oysters, seafood, grilled fish, or fresh goat cheeses. It can be appreciated in its youth for its liveliness but also has potential for several years of evolution in the bottle.
