ROMAIN JAMBON - Chardo Slice - White 2016

What a nice story these 4 rows of Chardonnay discovered in the middle of a plot of Gamay! Worked like gamay, this grape produces Le Tranche Chardo, a white, fresh and mineral Beaujolais-Villages, to share with friends! The estate has 8.5 ha in Brouilly, on a very good quality terroir, with low yields, due to the age of the vines and the poor soil. Manual harvests are destemmed if necessary. Romain uses very little sulfur, works on the temperature which he maintains at 21 ° C as long as possible to gradually release aromas and tannins. The aging is done in enamelled vats for the Éronnes and in old barrels for the other cuvées.
