Atelier Guibert - L'Aven 2025 - IGP Saint-Guilhem-le-Désert
Born from the pioneering spirit of the Guibert family, founders of the famous Mas de Daumas Gassac, Atelier Guibert embodies a new expression of the terroirs of Aniane, in the heart of Languedoc. Imagined as early as 2020 by the five Guibert brothers, Samuel, Gaël, Amélien, Roman, and Basile, this independent wine project continues the family adventure while claiming creative freedom and a more experimental approach to winemaking. The selected plots benefit from the privileged environment of the Gassac valley, where Mediterranean influences are tempered by cool winds and the proximity of the reliefs. The diversity of soils and thermal contrasts promote balanced ripening of the grapes, allowing the preservation of the freshness essential for making great white wines. Each cuvée of Atelier Guibert is conceived as a particular interpretation of its terroir, favoring the authenticity of the fruit and measured interventions in the cellar. With L'Aven, the family offers an original white wine, built around four complementary grape varieties and a particularly careful aging. A cuvée that perfectly illustrates this new generation of Languedoc wines, capable of combining southern character, precision, and elegance.
L'Aven 2025 is made from a blend of Petit Manseng, Chardonnay, Viognier, and Sauvignon Blanc, four grape varieties with distinct personalities whose association constitutes the originality of this cuvée. Petit Manseng brings its natural tension and liveliness, while Chardonnay contributes to the structure and uprightness of the wine. Viognier enriches the whole with its floral nuances and stone fruits, while Sauvignon Blanc adds a fresher and more delicate aromatic dimension. After harvest, the grapes undergo a direct and gentle pressing, followed by a very light settling intended to preserve the natural richness of the juices. A racking takes place after 48 hours, before fermentation in tanks conducted with indigenous yeasts, to respect the identity of the grapes and their terroir. The wine then benefits from four months of aging on fine lees in tanks, followed by an additional seven months in barrels and demi-muids. This combination enriches the texture and develops aromatic complexity without sacrificing freshness, with the oak aging serving the fruit rather than imposing itself on the final expression.
L'Aven 2025 should reveal a light yellow color with golden reflections, bright and delicately shiny. Its bouquet promises to be expressive and nuanced, combining white-fleshed fruits, peach, and citrus with fine notes of white flowers and fresh apricot. Upon aeration, touches of candied lemon, pear, and almond could enrich this palette, while aging on lees would bring a discreet brioche dimension. On the palate, the blend should offer a seductive balance between ample body and particularly dynamic freshness. The tension of Petit Manseng and the precision of Chardonnay support the aromatic generosity of Viognier, while Sauvignon Blanc contributes to the liveliness of the whole. Aging in barrels and demi-muids adds depth and a delicately enveloping texture without masking the natural energy of the wine. The finish promises to be persistent, marked by citrus, fine bitterness, and a pleasant sensation of freshness. To be enjoyed young for its aromatic brightness or after a few years of aging, L'Aven will ideally accompany seared scallops, roasted turbot, langoustines, creamy poultry, or mushroom risotto.
