Château Haut Pauillac 2019
Located in the Pauillac appellation, Château Haut Pauillac is situated in one of the most prestigious areas of the Médoc, where deep gravel soils and subsoils mixing sand and clay provide particularly favorable conditions for Cabernet Sauvignon. The vineyard benefits from the temperate influence of the Gironde estuary, which helps regulate temperatures and supports a slow ripening of the grapes. The sought-after style remains faithful to the Pauillac identity, with a straight structure, precise black fruit, and notes of cedar and graphite that gradually appear with aging. Merlot adds more roundness and suppleness to the mid-palate, complementing the more vertical framework of the Cabernet Sauvignon. The 2019 vintage offered very favorable ripening conditions in the Médoc, allowing for concentrated grapes without losing the essential freshness for balance. The wine thus retains beautiful depth while remaining accessible after a few years in bottle. This combination of ripeness and structure allows it to fit within a classic Pauillac profile, with real aging potential.
Château Haut Pauillac 2019 is made from the traditional grape varieties of the appellation, dominated by Cabernet Sauvignon and Merlot. The vinification aims to preserve the brightness of the fruit while progressively building the tannic structure, without excessive extraction. Cabernet Sauvignon provides structure, freshness, and length, while Merlot complements the blend with a fleshier texture. The aging then refines the tannins and gradually integrates the woody nuances into the fruity profile. The 2019 vintage stands out for its generous ripeness, giving the wine a broad body, but the whole retains a sufficiently fresh framework to avoid any heaviness. After several years of aging, the tannins begin to soften and the aromatic palette gradually gains complexity. The wine can be enjoyed today while still having interesting potential for a few more years in the cellar.
The color shows a deep garnet hue with still strong ruby reflections. The nose opens with blackcurrant, blackberry, and black plum, accompanied by nuances of cedar, graphite, and licorice. With aeration, touches of cocoa, blond tobacco, and sweet spices progressively enrich the bouquet. The palate is structured yet supple, with now well-integrated tannins that give a velvety texture. The black fruit maintains a beautiful presence and extends over a slightly smoky and mineral framework. The finish remains balanced and persistent, on blackcurrant, spices, and fine wood. Château Haut Pauillac 2019 will accompany a grilled rib steak, roasted rack of lamb, duck breast, pigeon, or mushroom dishes.
