Gilles Troullier - The Big Gilou 2025
The Domaine Gilles Troullier is one of the discreet but highly sought-after signatures of Roussillon, in a high-altitude area where granitic soils bring a unique freshness to the wines. After a career marked by solid experience in the South, Gilles Troullier chose to work on a small scale, on about 6 hectares of vines, with an artisanal approach and great attention to the vitality of the grapes. His vineyard includes Grenache, Syrah, Carignan, and Lledoner Pelut, with an approach of organic and biodynamic farming that is not certified. Fermentations occur naturally, with indigenous yeasts, and extractions remain measured to preserve the fruit, energy, and finesse. The Big Gilou 2025 perfectly illustrates this quest for a southern red without heaviness, bright, supple, and deeply digestible. The cuvée highlights Grenache Noir in an airy interpretation, far from the overly rich or overly sunny expressions of the grape variety. The cuvée The Big Gilou 2025 is made from 100% Grenache Noir, an emblematic grape of the South, here worked in a register of finesse and freshness. The old vines at altitude, on stony granitic soils, give the wine a more taut, more floral, and less opulent expression than some Mediterranean Grenaches. The gentle vinification, often described as an infusion, preserves a clear color, bright fruit, and very delicate tannins. Natural fermentations accompany the expression of the grape without trying to correct or mask the vintage. Aging in egg-shaped or ceramic jars, mentioned by some specialized sources, promotes a pure texture without marked woody notes. The 2025 vintage seems to continue the identity of the cuvée, with a light, juicy, floral, and immediately appealing red. The Big Gilou 2025 is therefore a Grenache of pleasure, but not simplistic, as its freshness, precision, and silky touch reveal true winemaker work.
On tasting, Gilles Troullier The Big Gilou 2025 shows a clear ruby robe, bright and lightly extracted. The nose may evoke fresh cherry, morello cherry, strawberry, raspberry, peony, sweet spices, and a subtle balsamic note. On the palate, the wine is supple, airy, and very fluid, with delicate body and almost imperceptible tannins. The Grenache expresses here a crunchy red fruit, a silky texture, and a fresh finish that immediately calls for a second glass. The whole retains a beautiful energy, with an impression of purity and naturalness that makes the wine particularly convivial. This red Vin de France will ideally accompany roasted poultry, pork chop, grilled meats, artisanal pizza, confit vegetables, simple Mediterranean cuisine, or a charcuterie board. It should be served slightly chilled, around 14 to 15 °C, to highlight its fruit and great drinkability.
