Domaine de Baronarques Red 2019
In Saint-Polycarpe, on the first foothills of the Pyrenees, Domaine de Baronarques cultivates a unique identity within the Languedoc vineyard. Acquired in 1998 by Baroness Philippine de Rothschild and her two sons, this former estate has undergone a profound restructuring, inspired by the know-how developed in other family estates, notably Château Mouton Rothschild. Its vineyard extends over slopes located between 250 and 350 meters in altitude, where Atlantic and Mediterranean influences meet in an environment particularly favorable to the ripening of the grapes. The mainly clay-limestone soils, punctuated by gravelly-sandy formations, offer a diversity of terroirs that allows the cultivation of both Bordeaux grape varieties and southern varieties. This dual influence precisely constitutes the originality of the estate, whose wines combine the structure of great Bordeaux blends with the generosity of Languedoc. In the Limoux appellation, Baronarques thus defends an ambitious concept of wine, based on parcel selection, precise blending, and attentive aging to express the terroir.
The 2019 vintage particularly illustrates this meeting between two winemaking traditions, with a blend of 46% Merlot, 27% Cabernet Franc, 18% Syrah, 8% Malbec, and 1% Cabernet Sauvignon. After a mild and dry winter, spring rains replenished water reserves before a hot summer, punctuated by several heatwave episodes. The altitude of the vineyard and the natural freshness of its environment played an essential role in maintaining the balance of the grapes. Manual harvests took place from September 22 to October 17, allowing each grape variety to be picked at its optimal maturity, in excellent sanitary conditions. After meticulous sorting, the grapes were destemmed then lightly crushed before fermentation in stainless steel tanks, followed by maceration adapted to the characteristics of each batch. The wine then benefited from twelve months of aging in French oak barrels, one-third new wood and two-thirds barrels that had contained one or two wines. This maturation accompanies the depth of the vintage while preserving the aromatic freshness of the Cabernet Franc and the spicy dimension of the Syrah.
The deep garnet color announces a wine of beautiful intensity, whose bouquet combines ripe black fruits with floral and spicy nuances. Blackcurrant, blackberry, and plum are gradually accompanied by licorice, dried flowers, and a minty touch that brings a pleasant sensation of freshness. The attack is ample and structured, with a generous body that nevertheless retains much precision. The tannins, dense but elegant, draw a deep and silky mouthfeel, in which notes of dark chocolate, stone fruits, and pepper appear. The finish is distinguished by its length and spicy character, without the richness of the vintage overpowering the overall balance. After several years of aging, this 2019 enters a favorable tasting period while retaining enough structure to continue its evolution in the cellar. A roasted rosemary lamb square, a beef fillet with porcini mushrooms, duck breast, or pigeon with mild spices will accompany its depth and enveloping texture.
