40 km south of Bordeaux, located in Preignac, on a terrace of the Garonne, Château Bastor-Lamontagne extends its 56 hectares of vines on a magnificent silico-gravelly terroir entirely devoted to the production of sweet wine.
The grape varieties are characteristic of the appellation: 80% Sémillon, 20% Sauvignon. Sémillon contributes to the power of the wine and the Sauvignon to its liveliness and freshness. The average age of the vineyard is 35 years. Long and delicate, the harvest at Château Bastor-Lamontagne is done by hand and in several sorts, to the rhythm of the over-ripening of the grapes. At each pass, only the grains which have reached the optimum concentration are selected. The harvest mobilizes around 80 people and requires between 4 and 6 passages (sorting) in the vines. The concentration of the grapes on the vine leads to limited yields, which rarely reach more than 20 hl / ha. Once the harvest has been harvested, the delicate and gradual extraction of the juice is carried out by pneumatic presses. After a light settling, these musts then ferment in barrels, of which about 15% are renewed each year. Slow and controlled fermentation lasts 3 to 4 weeks. At the end of fermentation, the aging takes place in barrels for 13 to 18 months, depending on the vintage. The wines are bottled without fining and after a single filtration.
