Ancestor of the Fabre family, Guillaume de Rouville was a noble and respected magistrate who was Alderman of Lyon in 1589. Of passionate character, he operated several wine estates and also had a particular affection for the cultivation of silk. This wine is a tribute to his nobility and his passion.

Terroir; We designed this cuvée with a majority of Syrah from two plots on the upper part of the estate. These vines are located at an altitude of 390 meters, the terroir of the property provides a great minerality to these grapes which benefit from the night freshness and optimal sunshine during the day. The soils with a limestone tendency on the surface and clayey in depth provide the vines with great natural resistance. Protected to the north by an oak wood, the plots face an olive grove to the west.
Assembly; 95% Syrah, 5% Grenache.
VINIFICATION IN VESSELS; Each harvested plot is vinified separately in stainless steel vats. The harvest is destemmed and crushed then vatted by gravity. Before fermentation, the grapes macerate at 7 ° C for about 4 days. Our vinification is natural and traditional. We favor long macerations for this wine. The juices are drained by gravity and well separated between the free-run juices and the press juices. VINIFICATION IN TRUNCONIC VESSELS: We collect the grapes in boxes and put them directly in a cold room for 2 to 5 days. Destemming, crushing and barreling are carried out by hand. The vinification is natural and traditional (28 ° to 32 ° C). The wooden vats are devoured by gravity, free-run juices and press juices are carefully separated. We also favor long macerations for this wine. MATURING: Each free-run juice from each plot is raised separately. The free-run juice is aged in Bordeaux and Burgundy barrels of 1 wine. The total aging time is on average 12 months. The pressing of the marc is carried out with a pneumatic press of last generation. The juices that come out are directly placed in barrels of 1 wine, from the softest to the strongest pressing, in order to separate them well. We age all our presses for 12 months in barrels before reintegrating them into free-run juice for the collages which precede bottling. We blend our wines at the last moment, a month and a half before bottling. We then let the bottles rest for around 9 months before marketing them.
Guillaume de Rouville - St Maurice: Coming from the best plots, this wine has a dark purple color. It evokes the terroir by its voluptuous and sensual character. It gives off scents of blackberries and garrigue. Impressive in concentration - admirable in depth, it lines the palate with silky tannins.
