Fiercely independent, François Mitjavile is an erudite winegrower, passionate about the history of agronomy, who revealed Tertre Rotebœuf, this “extravagant, the most exotic clay terroir on the south coast” of Saint-Émilion.
For him, a great wine is "to succeed in blending a property", a vision in contrast to the doxa of châteaux which today divide their production into two, three or even four vintages, with more and more of tries to shine in the rankings.
This tendency towards eugenics of the grape and its concentration directs the production towards "great wines cans" that the visionary François Mitjavile refutes. Here everything is assembled from pressing, at each racking, matured in new barrels from a single cooper (Radoux, fine grain, blond toast), for two to three years: "It must be simmering", because a great wine, for François Mitjavile, becomes civilized through aging. With its low vines, their well-regulated vegetative cycle, their perfect photosynthesis (little leaf stripping), the south-facing vineyard is harvested late and promptly in the early stages of the twilight decomposition of the grapes.
"Wines made from grapes picked at the threshold of their decadence age better than those harvested early and too crunchy. You have to look for freshness in a slight over-ripening." Tertre Roteboeuf undeniably has a singularity, a particular accent that makes this wine one of the most fascinating and indispensable in Saint-Émilion.
