Domaine Sylvain Dussort - Bourgogne Pinot Noir 2018
Domaine Sylvain Dussort is located in the town of Meursault, in Burgundy. Sylvain Dussort, son of wine growers and coopers, took over the family business with his wife in 1982. Over the years, the estate has grown and now covers 6.5 hectares. Sylvain Dussort produces his wines through sustainable agriculture; the treatments of the vine are carried out with phytopharmaceutical products based on copper and sulfur, according to the needs of the plant, its vegetation and the weather. The fertilizers are organic and the vinification is carried out traditionally, with natural ferments without any contribution of yeast.
The Bourgogne Pinot Noir comes from vines of 30 years on average, cultivated on the localities "Les Durots" and "Lameroses", on the edge of the Volnay appellation. The harvests are manual and undergo total destemming. Fermentation takes place in wooden vats; the harvest is reheated to start the fermentation without yeasting, over ten days. Aging is carried out in vats and in barrels (at 20%), on lees for 12 months.
