Zacapa is a rum maker from Guatemala that is particularly famous today. The specificity of the distillery is to use concentrated cane juice and natural yeasts extracted from pineapple. Once fermented, the juices are distilled in a still with a single copper column, then the eaux-de-vie are transported to be aged in the cellars located at an altitude of more than 2,300 meters.
Zacapa Edicion Negra Rum takes its name from its ultimate ageing. It is a blend of Zacapa rums aged between 6 and 24 years old in American bourbon, European wine and Spanish Sherry casks. This rum is aged according to an ancestral method imported from Spain. In a solera system, the barrels are organized into levels, from the youngest to the oldest. Thus, the young rums are sung at the highest level and then gradually, the part of rums evaporated in the lower floors (part of the angels) is completed by the rums of the upper floors. Thus rum goes down the barrel stages as it gets older and the level closest to the ground, called solera, is a mix of rum of different ages. Following this very particular aging, this rum has been the subject of a final refining barrel ex-Bourbon American and ex-Pedro Ximénez.
