LUCIEN AVIET - Trousseau - Cuvée des Geologues - Nonceau 2018
The Caveau de Bacchus is based in Montigny , in the Jura . It was created in 1961 by Lucien Aviet , who was joined by his son Vincent in 1999. Lucien Aviet is still very involved, but now the reins are gradually being taken over by his son. Consisting of a small 6 hectares, the vineyard has a traditionalist tendency. The production is entirely harvested by hand and destemmed. Spontaneous fermentations take place in large, old, very well-maintained Alsace tuns. The bottles have always been sealed with wax and are now part of the hallmark of the wines.
This Trousseau comes from the place called Nonceau , whose terroir is made up of different types of limestone, gravel scree and gray marl from the Lias.
