Champagne Soutiran - Signature - Brut - Grand Cru
The Soutiran Champagne House is located in Ambonnay , in the Montagne de Reims in Champagne . The estate was created in 1950 by Gérard Soutiran. In 1969, Alain Soutiran took over the business, which he sold to his daughter Valérie 20 years later. Today, the family works 6 hectares of vines, the majority of which are on the Ambonnay terroir, with a few Premier Cru plots in the communes of Trépail, Chigny les Roses, Ludes and Chamery. This production is supplemented by the purchase of grapes, part of the vines of which are cultivated by the family. The vineyard, made up of approximately 30 plots, is conducted using sustainable viticulture .
The grapes are harvested manually over a period of approximately 10 days. After pressing, the juices carry out their alcoholic and malolactic fermentation in oak barrels and stainless steel vats. Wines fermented in barrels are aged on the lees without racking until blending and with stirring. After bottling, the wines rest on slats between 5 and 8 years depending on the cuvée. After disgorging, the wines remain in the bottle for another 6 months.
The Signature cuvée is a blend of Chardonnay (70%) and Pinot Noir (30%) from Grand Cru plots. The harvest base comes from the 2018 vintage, supplemented with reserve wine from the 2013 to 2017 vintages. A part (16%) is vinified in oak barrels. The wine is aged on slats for 3 years. It was disgorged in March 2022 and its dosage is 4 g/L .
