Verzy Cidery - Cider 2022
The Verzy Cidery was born from the friendship and shared vision of five passionate winemakers from the Montagne de Reims: Quentin Paillard, Flavien Nowack, Adrien Renoir, Bertrand Lapie, and Antoine Bouvet. Together, they wished to create a high-quality cider, inspired by the demanding principles of winemaking rather than traditional cider-making methods. Located in Verzy, in the heart of the Champagne chalk hills, the cidery produces precise and ambitious cuvées with a decidedly winemaker’s approach. The apples and pears are organic and biodynamic, coming from trees aged 30 to 250 years, cultivated in Champagne and Normandy. This project is above all a human adventure, based on sharing experience and seeking a pure expression of the fruit.
The Cider 2022 is a dry cider made from carefully selected varieties such as Dabinett, Harry Master, and Judor. Fermentations take place in oak barrels for nearly a year in the Verzy cellar, bringing structure and complexity. The secondary fermentation is carried out in the bottle thanks to the natural sugar from the apples and pears, without adding refined sugar, in a manner close to the Champagne method. The cider is then aged on lees for at least 12 months, refining texture and depth. The dosage is very low, around 1 g/L, highlighting its dry and precise profile.
On tasting, the color is bright golden, animated by fine persistent bubbles. The nose reveals delicate aromas of ripe apple, white flowers, and slight hazelnut, with a subtle woody complexity. The palate is lively, carried by a beautiful natural acidity, before stretching towards a dry, clean, and mineral finish, evoking the chiseled style of great Champagne wines. Ideal as an aperitif, with seafood, oysters, or aged cheeses, this cider reflects a demanding and refined artisanal approach, at the crossroads of the wine world and author cider-making.
