Cidrerie de Verzy - Perry 2022
The Cidrerie de Verzy is the result of the collaboration of five winemakers from the Montagne de Reims – Quentin Paillard, Flavien Nowack, Adrien Renoir, Bertrand Lapie, and Antoine Bouvet – driven by the desire to create highly precise ciders and perries, inspired by winemaking methods. Located in Verzy, in the heart of the Champagne chalk quarries, the cidery works with fruit from old trees cultivated using organic and biodynamic farming. Their approach relies on long fermentations, aging on lees, and natural secondary fermentation, in a spirit close to great sparkling wines. Each cuvée is conceived as a terroir wine, with rigor and humility.
The Perry 2022 is made from the Pan de Blanc variety, selected for its aromatic finesse and natural tension. Fermentations take place in oak barrels for several months in the Verzy cellar, before a second fermentation in the bottle carried out thanks to the natural sugars of the fruit. Aging on lees refines the texture and adds complexity while preserving purity and brightness. The dosage is extremely precise, at 1 g/L, highlighting the dry and taut style of the cuvée. This winemaker’s approach gives the perry a structure and depth rarely achieved in the cider world.
On tasting, the color is clear and bright, animated by a fine and persistent bubble. The nose reveals delicate aromas of fresh pear, white flowers, and a subtle slightly honeyed note. The palate is lively, straight, and elegant, supported by a perfectly integrated natural acidity. The finish is dry, precise, and mineral, with a great sensation of purity. Ideal as an aperitif, with seafood, fine fish, or soft cheeses, this Perry 2022 illustrates a demanding and contemporary vision of fermented fruit.
