Bonnes Mares 2023 comes from the estate's parcels located on the white and brown soils that structure this Grand Cru. The grapes are harvested at perfect ripeness, carefully sorted, and then vinified to preserve the integrity of the Pinot Noir. Extractions are gentle, and aging takes place in lightly toasted oak barrels with a controlled proportion of new oak to add depth without overpowering the wine. The 2023 vintage, sunny yet restrained, showcases a noble concentration balanced by a savory freshness.
The nose opens with black cherry and ripe raspberry, joined by peony, violet, and a hint of blood orange. With aeration, notes of graphite, blond tobacco leaf, and a touch of fine cocoa emerge. The palate combines density and precision. The attack is direct, the ample mid-palate unfolds vibrant black fruits edged with a distinct chalky structure. The tannins are tight and silky, perfectly integrated, and support an energy that lengthens the palate. The finish is very long, fresh, and saline, with lingering notes of Morello cherry, sweet spices, and flint.
At the table, this grand cru pairs beautifully with a roast beef fillet with a light jus, pigeon with chanterelles, duckling glazed with mild spices, or a black truffle risotto.
