J. Bally is located in Carbet, Martinique not far from the Pelee mountain. The origins of J. Bally date back to 1917 when Jacques Bally bought a sugar company then in ruins, the house Lajus (whose creation dates back to the 1670s). A true visionary, this young engineer from École Centrale de Paris then equips him with a steam engine and a Creole column of his own, inspired by the processes used to make fine spirits such as Cognac. He becomes one of the pioneers of aging techniques of agricultural rums. In order to strengthen his brand, he decided to offer his production a strong identity that goes through a bottle with a unique design first pyramid-shaped and then square. Today Saint-James distills rum Bally.
This Bally Vintage 2005 is part of the range of recent vintages produced by the famous brand Martinique, specialist in old farm rums. 10 years of aging in barrels have given this rum a powerful character with notes of precious wood and sweet spices. But this rum would not be a Bally if we could stop the description here ... the magic of their know-how appears when sweet fruity fragrances come to bring freshness and delicacy with an unexpected harmony.
