Château Clément Pichon is a Cru Bourgeois Supérieur in the Haut Médoc appellation which produces a quality and accessible wine. The harvest is manual, the bunches are sorted for the first time in the vineyard and then they are sent to the vat room in bastes (wooden containers for transporting the grapes). They are sorted a second time on the table and then undergo total destemming.
The vinification process faithfully respects the plot lots with fermentation in thermo-regulated stainless steel vats, a long maceration of 25 to 30 days, a malolactic fermentation partly carried out in new barrels. For 13 to 16 months depending on the vintage, the wine is matured entirely in barrels, half of which is renewed each year, by under-drawing in a reasoned way and by regularly stirring the lees. An egg white fining is done before bottling at the property (around 120,000 bottles per year).
Château Clément Pichon is a structured wine with silky tannins. The 2015 vintage is one of the finest vintages of this property, a great success.
