Khayyâm is a cuvée which pays homage to Omar Khayyâm, Persian poet and mathematician who wrote several poems celebrating wine and women. It is a blend of Grenache (75%), Mourvèdre (15%) and Syrah (10%). Harvesting is entirely manual with strict sorting on the plot. During the vinification, the Grenache and Mourvèdre bunches are destemmed and lightly crushed and the Syrah is vinified in whole, uncrushed bunches. The grape varieties are blended in the vat, the maceration lasts 15 days, with a few punching downs. The wine is then pressed and aged for 9 months, in foudres for 50% of the wine.
