Hudson is a whiskey brand produced by Tuthilltown Spirits Distillery in New-York, in the United-States of America. In 2003, Ralph Erenzo had a wild idea to move upstate and start a distillery, way back before there was a craft distiller in every neighbourhood across the United-States. Ralph fought for his whiskey, and challenged the government to change the laws for craft distillers and made whiskey in the state for the first time since Prohibition. Now craft distilling is everywhere with over 1,800 distilleries in the United-States, and over 180 in New York alone. The distillery began with the construction of the Tuthilltown Gristmill; in 1788, Selah Tuthill built one of the first gristmills in the area to render local grains into flour. The Tuthilltown Gristmill was the longest continuously operating gristmill in New York State history. In 1982, it was added to the National Register of Historic Places. Around that time, it began producing kosher for Passover matzo flour for the Jewish community in and around New York City.
Baby Bourbon is made entirely from New York maize. It was aged for 4 months in very small barrels (9 to 60 litres), enabling the whiskey to reach maturity and its deep amber colour quickly.
