Père Labat - Clos Parcel - Les Mangles - 61%
Père Labat is a brand of rums from the island of Marie-Galante . The history of the distillery dates back to the 18th century when Madame Poisson acquired the estate, then a simple sugar factory on the island of Marie-Galante. At the beginning of the 20th century, Mr. Rameau, who had become the owner of the estate, made improvements and invested in a still and a Creole column in red copper. These investments then made the Domaine Poisson pass from a sugar refinery to a distillery. He also decides to pay tribute to a pioneer in the techniques of distillation of fresh cane wine; Father Labat. These quality rums, produced in line with the great agricultural rums by the Poisson distillery, have therefore been baptized the "rums of Père Labat".
This parcel-based Les Mangles rum comes from the north of the Poisson Property, protected by the topography which benefits from good sunshine and good ventilation. The purple cane of this plot is cut by hand. Fermentation lasts 80 hours. After distillation in Creole copper columns, the rum obtained is at 70.7° then reduced to 61°.
