Paulus Wine Co. - Bosberaad - Chenin Blanc 2021
Paulus Wine Co. is a collaboration between Paul Jordaan , South African, and Pauline Roux , French. Paul Jordaan, after years of travels and wine experiences, had been working alongside Eben Sadie for 10 years. Pauline Roux was supposed to return to Tuscany but decides to do one last harvest in South Africa and decides to stay. She has worked with Adi Badenhorst and Andrea Mullineux. The duo met in 2016 when they were working together for an estate in the Swartland region. Two years later, they created Paulus Wine Co. Paul takes care of viticulture while Pauline is in charge of winemaking. The dates of the harvest and the work in the vines are discussed and chosen together, all the important decisions of the cellar are approved before being executed.
The Bosberaad cuvée is made from Chenin Blanc , grown in the Paardeberg , in the Siebritskloof valley. The vineyard belongs to Francesca Shreiber, a young winemaker. The vines were planted in 1980 on decomposed granite on an east-facing ridge, limiting the strong sunshine in the region. They are conducted in organic farming. The harvest is manual and pressed in whole bunches. Fermentation takes place in old oak barrels . The wine is aged on the lees for about 10 months .
